Dinner — & Apple Muffins Recipe


Last Night’s Dinner:
Pasta sauce in crockpot:3 jars prepared pasta sauce
Bit of minced garlic and italian seasoning
green bell peppers and red bell peppers chopped (10 cents each from Woodmans)
1 large onion chopped
2 small cans mushrooms

Brownies from a box

Home made Apple Muffins: (mom’s recipe, from an old betty crocker cookbook)
2 cups flour
3/4 tsp. salt
2 tsp baking powder
4 Tbsp sugar
2 Tbsp butter
1 cup finely chopped apples
1 egg beaten
1/2 cup milk
12 apple slices
1/2 tsp cinnamon

Mix flour, salt, baking powder and half of the sugar.  Blend in the butter with a fork.  Add chopped apples, mix. Add egg with milk.  Drop by spoonfuls into greased muffin pans.  Place one slice of apple onto each muffin, mix remaining sugar with the cinnamon, sprinkle over top and bake in 400F oven for 20 minutes

I also made some salads with our meal last night.

Tonights Dinner:
Gravy Pork Chops in Crockpot:
4-6 Pork chops along with a gravy made of 2 cans of condensed soup and a packet of ranch blended then added to crock with pork chops.

Herbed Vegetables:
1-2 lbs.  Vegetables of your choice (we like California vegetables which I believe is cauliflower, carrots, broccoli blend) 1-2 Tbsp. vegetable oil or melted butter along with 1-2 tsp. of spices/herbs of your choice (we like italian seasoning and minced garlic)

Will probably make some type of seasoned rice with this too.
