Cheap Recipe 2: Spicy Hamburger Casserole

My 2nd recipe using fairly cheap or food pantry obtained ingredients.  Tried this tonight, it was quite good.  Happened to be lucky enough to find ground chuck for $1.67/lb. at Woodman’s recently and had remaining ingredients on hand.

Spicy Hamburger Casserole

1 lb Hamburger Meat ($2/lb. buy price; Sussex Food Pantry usually has as a freezer item choice)

1 can Rotel Tomatoes with green chilies (knock off brand at aldi $.59 each as of Nov 13.  Seen at food pantry sometimes)

1 box Velveeta Shells and Cheese (could substitute mac & cheese as a cheaper substitute probably or combine cheddar Ragu with shell pasta; I had this on hand from somewhere)

1/2 cup Shredded Cheese (I actually omitted this and it is still good)

1 pkg Taco Seasoning


Brown hamburger meat.

Cook macaroni while meat is browning.

Drain meat and add taco seasoning like it says on seasoning package.

Let cook for about 4 to 5 minutes.

Add rotel tomatoes and macaroni. Add cheese packet from velveeta cheesy shells or cheddar ragu or similar.  Stir until well blended

    Easy chicken/potato dinner

    Tonight I got marinated chickens (they are cut in 1 half chicken and then I cut them into pieces once I get home) with seasoning already on them for 99 cents/lb at the grocery store.

    I took large potatoes with skin and cut them into 1/4 inch slices and put them as a layer on a pizza/cookie sheet (w/sides). Put the chicken (skin side up) on top (w/spice marinade) and then baked at 400. The juices/marinade off the chicken bakes onto the potatoes. The family loved it and it was easy! We had 5 eat dinner and we at almost 3 half chickens. Total price was $3.81 + potatoes price (out of our 20 lb bag that we bought)
